Recipes: Pickled Eggs and Beets
There are many ways that you can make pickled eggs and beets. There are those who make it with no sugar, with cloves and so on. The easy and simple way of making them takes about ten minutes of preparation and twenty minutes cooking. In about four hours and thirty minutes, it is ready. It can be kept in the fridge for up to two weeks. The recipe here yields eight servings and it can be doubled for larger gatherings or servings. Although this may stain a plastic container, it is not advisable to pickle the eggs in a metal container since they will become slimy. These eggs are perfect as festive gifts, for picnic, family gatherings, and even as dinner decoration.
Ingredients
8 eggs
1 (15 ounce) can sliced beets with liquid
1/2 cup water
1/2 cup white sugar
1/2 cup white vinegar
1/2 teaspoon ground cinnamon for seasoning (optional)
The preparation directions and cooking method
Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil and remove the saucepan immediately from heat. Cover it and let the eggs stand in hot water for about 10 to 12 minutes so that they can be well cooked. Remove the eggs from the hot water and peel them after they have cooled. Place the peeled eggs in a glass or plastic container.
Take the rest of the ingredients (beets, vinegar, sugar, water and/or cinnamon) and put them in a saucepan. Bring the combination to a boil. Ensure you stir the mixture well so that the sugar can dissolve. Once the sugar has been completely dissolved, pour the solution over the eggs. To make them set well, cover and chill for 4 hours or if you can, overnight.

These were prepared back in the day with hard-boiled eggs, commercially prepared beets and hot peppers, and vinegar. Other versions include the Indian version which features yellow curry, jalapeno pickled eggs, and the tarragon mustard version. Using the same method above, you could make certain variations to the recipe to suit your liking and taste. There are however, two ingredients that are standard no matter which method you choose to use; the eggs and the beets. The beets are especially used in order to bring out the red or pink colour onto the pickling solution and eventually onto the eggs. Sometimes the eggs turn out a deep purple.
